Where does the beef come from?

Every cut comes from Hook & Cleaver Ranch's own American Akaushi Wagyu herd raised on the ranch's Idaho pastures — never feedlot or commodity beef.

Do you ship nationwide?

Yes. Hook & Cleaver ships to the contiguous United States. Orders leave the butcher shop frozen, packed in insulated coolers with dry ice.

Is the beef hormone-free and antibiotic-free?

Yes — no added hormones and no antibiotics, ever.

What is American Akaushi Wagyu?

Akaushi is one of the four Japanese Wagyu breeds (Japanese Red). American Akaushi is raised in the United States from Japanese genetics and is known for deep marbling, higher monounsaturated fat, and a beefier flavor than A5 Japanese Wagyu. Hook & Cleaver Ranch cattle are 100% American Akaushi.

Where are the retail butcher shops?

Temecula (28780 Old Town Front St, Suite B8, Temecula, CA 92592) and Murrieta (41735 Elm St, Suite 303, Murrieta, CA 92562). Both open Monday through Friday 10am–5pm.

What is the main difference between Wagyu and regular beef?

Wagyu comes from Japanese cattle breeds genetically selected for extreme intramuscular marbling. Standard American beef is overwhelmingly Angus, bred for growth and yield. The result is Wagyu carries 2–3× the intramuscular fat and a chemically different fat profile.

Is Wagyu beef healthier than regular beef?

Akaushi Wagyu specifically has an unusually high oleic-acid content — the same heart-healthy monounsaturated fat found in olive oil — and a higher monounsaturated-to-saturated fat ratio than standard beef. Certified Akaushi cuts are recognized as heart-healthy by the American Heart Association.

Why is Wagyu beef so expensive?

The genetics are rare, the cattle take longer to raise, and premium ranches like Hook & Cleaver don't finish in feedlots or use hormones. Every step costs more than commodity beef, and it shows in the price and in the plate.

Is American Wagyu real Wagyu?

Yes, when it's pure or high-percentage. Hook & Cleaver's herd is 100% American Akaushi — the Japanese Red breed — raised in Idaho. "American Wagyu" ranges from full-blood to 50% crossbreds, so it's always worth asking about the breed percentage.
