To fully appreciate the delicate flavor and tenderness of an Akaushi Wagyu Bone-In Filet Mignon, it’s best to use a cooking method that allows for precise temperature control and even cooking. A combination of searing and even temperature finishing is ideal for this cut.  Cooking Instructions: Searing and Oven Finishing Method (Recommended):
  1. Prepare the Steak: Remove the steak from the refrigerator 30 minutes before cooking to allow it to come to room temperature. This ensures even cooking.
  2. Season: Season the steak generously with salt and freshly ground black pepper (or your favorite steak seasoning).
  3. Sear: Heat a skillet (preferably cast iron) over medium-high to high heat. Add olive oil or butter. Once hot and shimmering, sear the steak on all sides, including the bone, for about 2-3 minutes per side, developing a nice crust.
  4. Oven Finish: Transfer the skillet to a preheated oven (temperature depends on desired doneness – see chart below). Alternatively, if you didn't use a cast iron skillet, transfer the seared steak to an oven-safe baking sheet. Cook until the desired internal temperature is reached (use a meat thermometer).
Oven Temperature & Approximate Cook Times (for a 1.5-2 inch thick steak):
  • Rare: 250°F (120°C) - 8-10 minutes
  • Medium-Rare: 275°F (135°C) - 10-12 minutes
  • Medium: 300°F (150°C) - 12-15 minutes
  1. Rest: Remove the steak from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute, ensuring a tender and flavorful steak.
